The journey of a cashew

From the Konkan tree to your table, in seven steps.

1

Blossom and growth

Cashew trees flower on the Konkan hillsides. Each nut grows at the bottom of a juicy cashew apple.

2

Harvest

When the fruit ripens it falls to the ground. The nuts are collected by hand and separated from the apples.

3

Sun drying

Raw nuts are spread out in the sun and turned regularly until they dry well and are ready to store.

4

Shelling

The hard shell is carefully opened to free the kernel inside, taking care to keep it whole.

Peeling

The thin brown skin is taken off and the kernel turns creamy white. Some kernels are kept skin-on.
